Apple and Raisin Cake
Ingredients:
For the Cake:
1 and 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
2large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 medium apples, thinly sliced
1/2 cup raisins
1/2 teaspoon ground cinnamon (optional)
For Garnish:
Powdered sugar, for dusting
Instructions:
Prepare the Cake Batter:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the butter and sugar together until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
Assemble the Cake:
Pour the batter into the prepared springform pan and smooth the top with a spatula.
Arrange the apple slices in a circular pattern on top of the batter, slightly overlapping them.
Sprinkle the raisins evenly over the top of the apple slices.
If using, sprinkle ground cinnamon over the top.
Bake the Cake:
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Remove the cake from the oven and let it cool in the pan for about 10 minutes before removing the sides of the springform pan.
Garnish and Serve:
Once the cake is completely cooled, dust the top with powdered sugar.
Slice and serve the cake as a delightful dessert or with coffee or tea.
