BEAN AND HAM HOCK SOUP

Hearty bean and pork soup. Easy to prepare and a great way to use up leftover pork bone. This soup also contains a lot of mixed vegetables.


* Ingredients


° 1 pound large dry beans

° 8 cups of water

° Half a teaspoon of salt

° 1 pork shank

° 1 cup chopped carrots

° ½ chopped celery stalk

° 1 cup chopped onion

° 1 teaspoon minced garlic

° 1 teaspoon mustard powder

° 2 bay leaves

° 2 cups minced pork

° teaspoon ground white pepper

Step 1

 Rinse the beans, sorting out any broken or discolored kernels. In  saucepan on high heat, bring water to  boil. Adding salt & beans & removing from heat. Leave beans sit in hot water about   at least 61 min .

Step 2 

After 60 minutes of soaking, place the pan over high heat and add the pork bones, carrots, celery, onions, garlic, mustard and bay leaf to the pan.Stir well, bring to a boil, then reduce heat and cook for another 60 minutes.

Step 3

Removing pork bone / discard.Add minced pork and cook for other 30 min  Seasoning with ground white pepper to taste.
