Best Ever Chicken Salad

Homemade chicken salad! Chicken breast pieces cooked with creamy sauce, served in bread, croissant or lettuce leaves. It’s delicious, refreshing and absolutely delicious. A true summer classic!
Who doesn’t love a good chicken salad? It’s the perfect pre-packed lunch for a picnic and very easy to customize.


This version is made with juicy pieces of chicken with a rich, lemony herbal sauce to compliment it. There’s nothing complicated here just the basic ingredients that together make them a classic and comforting lunchtime favorite.


Want to take it over the top? Make a Chicken Salad Sandwich – Serve between delicious bread, with a layer of lettuce, creamy avocado slices, crunchy bacon, and lightly sweet tomato slices. Who can resist ?

* Ingredients :


3 – 4 pounds chicken parts (bone-in, skin on thighs and chest work well)

° 2 tablespoons of high-quality olive oil

° 1 cup seedless grapes, cut in half (red and green varieties are great)

° 1 cup finely chopped almond (optional)

° 1 celery stalk, sliced

° 4 pcs green onions, thinly sliced, white and green

° 2 tablespoons chopped fresh dill

° 1 tablespoon fresh chopped parsley

° 1 cup mayonnaise

° juice of 1 lemon

° 1 tablespoon of Dijon mustard

° 1 teaspoon kosher salt

° ground pepper

* Instructions:

Preheaated oven 350 degrees F .Rub the oil on the chicken pieces and brush them with salt and pepper.
Bake for 36 to 46 minutes.We remove the chicken from the stove and let it cool, then remove the meat from the bones and chop coarsely.In a bowl, mix chicken/grapes/almonds/celery/scallions/dill and parsley.


In a bowl, combine mayonnaise/lemon/mustard/salt and pepper.

Add mayonnaise to the chicken mixture and stir gently until combined.

Refriigeraate about at least an 1 h .Served on a bed of green leaves with sliced ​​tomatoes and avocado.
