When we go to a restaurant, my husband always gets the Italian Sausage and Peppers, which is one of his favorite dishes. He likes a hot sausage with a kick to it. However, you could certainly prepare them without the addition of marinara sauce or chopped tomatoes, if that is your preference.
You may use either mild sweet sausage or spicy sausage for this recipe. My personal preference is for a sweeter, milder sausage, while my hubby likes it to be as hot as possible.

INGREDIENTS NEEDED:

A Tbsp.Of olive oil.

500 grams. Of Italian sausages, you can use sweet or hot ones.
1 Tbsp.Of soft butter.

One large yellow sweet onion, I sliced it thinly.

One sliced red bell pepper.

One sliced green bell pepper.

4 minced garlic cloves.

1/2 Tsp.Of dried oregano.

1/2 Tsp.Of dried basil.

1/2 Tsp.Of salt.

Quarter a Cup. Of chicken broth, you can replace it with white cooking wine.

Canned diced tomatoes, drained, I used the 14-ounces can.

PREPARATION:

Step 1:

In a large pan, heat the olive oil over medium heat until shimmering. Brown the sausages on both sides, but do not cook through fully. After allowing the slices to cool somewhat, cut them into two-inch pieces.

Step 2:

The second thing to do is that you need to melt the butter in the same pan, and add additional olive oil if necessary, to taste.

Step 3:

And now, toss in the onion and bell peppers to the pan and cook until soft. Cook for a couple of minutes, or until the potatoes are slightly tender but not fully cooked through.

Step 4:

After that, you can season with salt and pepper, and then add the chicken broth or cooking wine and chopped tomatoes to taste.

Step 5:

To finish, you can remove sausage from the pan and heat until sausage is done, covered for a couple of minutes until the sausage is cooked through. Serve as quickly as possible to enjoy it warm.

NOTES:

To ensure that the onions and peppers don’t get totally soft, it’s important to time the cooking process so that they don’t become too soft too quickly.

If you are using a mild sweet sausage, you may wish to add some red pepper to keep the heat level under control.
