Loaded Steak Quesadillas

*INGREDIENTS


° 1 lb lean ground beef

° 1 chopped onion

° 1 grated carrot

° 2 clove garlic, finely chop

° 2 teaspoons fresh chili peppers (jalapeño type), seeded and finely chopped

° or 1/4 tsp. (1 ml) tabasco ® sauce

° 2 teaspoons chili seasoning

° 1/4 tsp salt

° 2 chopped tomatoes

° 1/4 c fresh cilantro (or parsley)

° 8 white flour tortillas

° 1 1/4 cup grated mozzarella cheese


*PREPARATION


1.

In a large nonstick skillet, cook ground beef over medium-high heat, breaking up with a spoon, for about 5 minutes or until no longer pink. Degrease the skillet.

Add onion, carrot, garlic, chili pepper, chili powder and salt. Cook over medium heat, stirring often, for about 4 minutes or until onion has softened. Add the tomatoes and cilantro and mix.

Spread about 1/2 cup (125 mL) ground beef filling on half of each tortilla.

Sprinkling with mozzarella cheese. Fold unfilled portion of tortillas over ground beef filling. Divide the quesadillas between two rimmed baking sheets.

Placing one baking sheet on upper rack of oven preheated 400°F (200°C) & other on lower rack. Bake for 10 minutes or until the quesadillas are crispy (switch and rotate the baking sheets halfway through cooking).

Cutting quesadillas to wedges and serving immediately.
