SALMON PATTIES

*INGREDIENTS :


6 PERS.

°400g salmon fillets

°3 large potatoes

°1/2 liter of milk

°100g breadcrumbs

°100g of flour

°50g soft butter

°2 lemons

°1 egg

°1 clove of garlic

°2 sprigs of thyme

°Nutmeg

°Frying oil

°Salt and pepper from the mill

*PREPARATION :

1.

Peeled potatoes and cut them to pieces. Rinse them and put them in a saucepan. Cover them with cold salted water (10 g of coarse salt per litre) and cook for about 10 minutes. Drain the potatoes and mash them with a whisk. Add the butter to it. Book.

Poach the salmon in the milk with the garlic, sprigs of thyme and nutmeg. Drain also then mash with fork. Mix the salmon with the mashed potatoes. Season with salt and pepper. Add the egg. Form croquettes between the palms of the hands.

Rolling croquettes in flour then in the breadcrumbs.

Fry the croquettes in hot oil at 170°C for a few minutes, until golden brown.

5.

Serve the croquettes hot, accompanied by lemon wedges.
