TASTE TACO CASSEROLE

*INGREDIENTS :


° 1 lb ground beef

° 1 small onion

° 1  garlic, minced

° 1 can (4 oz) Old El Paso Diced Green Chilies

° 1 packet  Old El Paso Taco Season Mix

° 1 can  black beans, rinse and drain

° 1 pack  frozen corn

° 3 cups shredded Mexican cheese mix

° 1 package (28 oz) frozen tater tots

° 1 Old El Paso Red Enchilada Sauce

° Garnishes: olives, cilantro, sour cream, tomatoes


*INSTRUCTIONS:


Preheat oven to 375 degrees and spray a 9×13 baking dish with cooking spray.

For extra crispy tater tots, cook the tater tots for about 10 minutes while preparing the beef mixture – otherwise, prepare as follows.

In a large skillet, brown the beef and onion.

Adding garlic towards the end of brown process & cook about 1 min.

Drain. Add green chiles, taco seasoning mix, black beans, corn and 2 cups cheese.

Mix to combine. If your pan isn’t big enough, you may need to mix it in a bowl.Pour mixture to prepared 9×13 pan. Arrange the tater tots over the mixture in a single layer.

Pour the enchilada sauce over the top of the pan as evenly as possible. Bake uncovered for 30 to 40 minutes or until the tater tots are nice and crispy.

Sprinkle the remaining 1 cup of cheese on top and return to the oven for 2-3 minutes or until the cheese has melted.Garnish with olives, cilantro, sour cream and tomatoes just before serving, if desired.
