On a recent busy night, my family had a wild time. One child in tennis, the other with a huge volume of assignments, and my son had football camp. Needless to mention, it was difficult to be on time for dinner, so I attempted to make dinner fast and easy.
I was grateful to have the ingredients to make this simple one-pan meal! I have developed this recipe for my family several times and it’s always been a favorite.
This fast and simple Teriyaki Chicken Casserole will be on your table in no time, served right from the skillet you cooked it in, without dirtying a plate, and no mess or cleanup required. Delicious, sophisticated Asian cuisine at home.

INGREDIENTS:

2 chicken breasts, remove all bones and skin.

1 medium bag.Of 12-oz Of stir-fry vegetables.

3 C.Of cooked brown rice.

3/4 C.Of low-sodium soy sauce.

1/2 C.Of water.

1/4 C.Of brown sugar.

2 Tbsp.Of cornstarch

2 Tbsp.Of water.

1/2 Tsp.Of ground ginger.

1/2 Tsp.Of minced garlic.

Here is how to prepare it:

DIRECTIONS:

Step 1:

I set my oven temperature to 350° Fahrenheit, and I covered a 9″.13″ non-stick baking pan with non-stick mist.

Step 2:

I combined the soy sauce, with water, brown sugar, ginger, and garlic in a saucepan and steam it over medium-high heat.

Step 3:

I switched the stove on medium fire. When heating, I removed the lid and cooked for one minute.

Step 4:

In addition, I mixed the cornstarch and water in another small dish until smooth.

Step 5:

Once the liquid was boiling, I transferred the contents to the saucepan and mixed them by stirring.

Step 6:

I cooked until the sauce has thickened then remove the pan from the stove.

Step 7:

I arranged the chicken breasts in the prepared oven, then I added one spoonful of the sauce to the chicken.

Step 8:

I put the chicken in the oven and bake at 350 degrees Fahrenheit until fried, then I took the chicken out of the oven and shred using two forks.

Step 9:

I mixed the vegetables into the mixture according to the package’s instructions.

Step 10:

In the casserole bowl, I combined the vegetables and rice, and then I added the chicken.
I drizzled in the remaining sauce and served it.

Step 11:

I mixed all together in the casserole dish once mixed. Return to the oven and simmer for 15 minutes.
I let it cool for 10 minutes before cutting.
