Whole Wheat Bread

*Ingredients :


°2 cups (500 ml) hot water (between 43°C [110°F] and 49°C [120°F])

°3 tablespoons brown sugar

°1 tablespoon active dry yeast

°2 teaspoons of salt

°2 tbsp olive oil

+ extra for grease

°1 egg

°1 tsp lemon juice

°3 cups (750 ml) whole wheat flour

°3 cups (750 ml) white flour

°Butter for greasing


*Preparation :


In the bowl of your mixer, combine the water and brown sugar. Add the yeast, cover with a cloth and leave for 15 minutes.

Add the salt, oil, egg, lemon juice and mix until well incorporated.

Add the whole wheat flour, mix, then cover again and let soak for 30 minutes. When the whole wheat flour has absorbed most of the liquid, add the white flour to the bowl.

Knead for 7 minutes with the hook or about 9-10 minutes by hand . Add a little water or white flour as needed to get the right mixture.

Lightly grease a large bowl and put the dough in it. Cover and let rise in a warm place for 45-55 minutes or until the dough is doubled in size. In a closed oven with the light on, for example.

Deflate the dough with your point, and let rise again, covered, for 45 to 55 minutes. Preheat the oven to 350 ° F (175 ° C) and generously grease two molds with bread with butter.

Deflate the dough again by dividing it in half and put in the loaf pans. Cover lightly and let rise for 20 minutes. Bake for 40 minutes.
