Lemon Blueberry Bread


°1/3 cup melted butter

°1 cup sugar

°3 tablespoons lemon juice

°2 large eggs, room temperature

°1-1/2 cup all-purpose flour

°1 teaspoon baking powder

°1/2 teaspoon salt

°1/2 cup 2% milk

°1 cup fresh or frozen blueberries

°1/2 cup chopped nuts

°2 tablespoons of grated lemon peel.


°2 tsp lemon juice

°1/4 c sugar..


In a large bowl, whisk together butter, sugar, lemon juice, and eggs.

Combine flour with baking powder and salt;

Stir in the egg mixture alternately with the milk, beating well after each addition.

Add blueberries, nuts, and lemon peel.

Transfer to greased 8 x 4 inch. pan; Baking at 350 degrees for 60-70 min Cool 10 minutes before removing from pan to a wire rack.

Combine the components of the glaze.

Sprinkle over warm bread. totally cool..
